Ingredients

  • 16-20 strawberries (depending on size)
  • 6 tbsp berry jam
  • 1 roll puff pastry (fully defrosted)
  • 1 egg
  • flour for dusting
  • powdered sugar for dusting

Preparation

Step 1

Preheat oven to 200 degree C.
Slice strawberries, removing stems; set aside.
Roll out pastry onto a sheet of parchment predusted with flour.
*Make sure to fix any tears in the pastry*
Cut the rolled out sheet into 6 squares.
Put a teaspoon of jam in the middle of each square.
Spread jam into a thin layer over pastry leaving 15 cm boarder.
Place strawberries on top of jam on one half each square keeping boarder.
Sprinkle a little powdered sugar over strawberries.
Whisk the egg and brush the egg along the edgies of each square.
Taking each square fold the side without strawberries over the other, forming a rectangle.
Press down the edges to seal.
Place on parchment lined baking sheet.
Brush rest of whisked egg over each pastry.
Pierce the top of each with 4 litle holes to allow trapped air to release.
Place in oven for 25-30 minutes until the pastry is puffy and golden.
Remove from oven, allow to cool slightly.
Dust with powdered sugar, and serve warm.
