Purple Hull Peas

Ingredients

  • 1 med onion, chopped
  • 1 tbs oil
  • 1 stalk chopped celery
  • 1 chopped gr. pepper
  • 1 1/3 c. chopped tomato
  • 4 c. purple hull peas, cooked with liquid.
  • Salt & pepper to taste

Preparation

Step 1

Sauté onion in oil 2 minutes, add celery and green pepper and sauté 2 more minutes. Add tomato, peas, salt and pepper to taste. Cook for 5 minutes and serve.
