Spinach Artichoke Dip

Ingredients
- 10 ounces frozen spinach thawed and squeezed semi-dry
- 1 can artichoke hearts drained and chopped
- 1/4 cup butter
- 2 cloves garlic, pressed
- 3 tablespoons chopped yellow onion or scallion
- 1/2 cup cream or half and half
- 1 package (8 ounce size) cream cheese cut in bits
- 1/2 cup fresh grated Parmesan Cheese ( or similar dry cheese)
- 3 dashes tabasco sauce or to taste
- 1/2 cup grated sharp Cheddar cheese

Preparation
Step 1
Melt butter on medium-low heat. Add garlic and onion stir for 1-2 minutes till lightly golden. Add drained spinach; mix; add artichokes; mix.
Add the half and half or cream and mix well. Lower heat and stir in the cream cheese and parmesan; mix until completely melted. Add tabasco sauce to taste.
Transfer to pie plate or shallow dish. Sprinkle cheddar cheese on top. Melt cheese in 350 degrees F oven or in microwave (if using microwave safe dish) until warm and melted. Serve with crackers, pita bread or your favorite dippers.
