  • Caramel
  • 3/4 cup sugar
  • 3/4 cup water
  • Custard
  • 6 eggs
  • 2 tsp vanilla
  • 1/3 cup sugar
  • 1 3/4 cup milk
  • 300 ml cream

Preparation

Step 1

Caramel
Combine sugar and water in saucepan, stir constantly over heat without boiling until sugar dissolves. Bring to a boil, boil rapidly without stirring, about 5 minutes or until golden. Pour into deep 20 cm round cake pan, Coat base evenly.

Custard
Lightly whisk eggs, vanilla, sugar. Combine milk and cream in pan, boil. Gradually whisk into egg mixture. Pour through strainer over caramel. Put in dish with water 1/2 way up sides. Bake 40 minutes, cool, refrigerate overnight. Turn onto dish before serving.
