Ingredients
- Warm Mustard Vinaigrette
- 3 tbsp olive oil
- 2 tsp dijon mustard
- 2 tsp maple syrup
- 1 1/2 tsp white wine vinegar
- 1/4 tsp salt
- 5 cups fresh spinach leaves, lightly packed
- 2 ripe medium avocados, sliced
- 1/2 cup sun-dried tomatoes in oil, drained and sliced
- 1/3 cup toasted pecan pieces
- 2 1/2 oz goat cheese, crumbled

Preparation
Step 1
Combine first 5 ingredients in small saucepan. Heat and stir on low until warm. Remove from heat.
Put remaining 5 ingredients into large bowl. Toss gently. Serve with dressing on side.
