Chicken Fried Rice

Ingredients

  • 1 cup diced, cooked chicken
  • 1 cup uncooked rice
  • 2 1/2 cups chicken broth
  • 1/4 cup chopped green pepper
  • 2 eggs, slightly beaten
  • 1 tablespoon soy sauce
  • 1/3 cup oil
  • 1/2 cup chopped onion
  • 1/4 cup thinly sliced celery
  • 1 cup finely shredded lettuce or Chinese cabbage

Preparation

Step 1

Combine chicken, soy sauce and 1/2 teaspoon salt. Let stand 15 minutes. Cook rice in hot oil in skillet over medium heat. Heat until brown, stirring frequently. Reduce heat. Add chicken mixture and broth. Cover and simmer 20-25 minutes, or until rice is tender. Remove cover last few minutes. Stir in onion, green pepper and celery. Cook, uncovered, until liquid is absorbed. Push rice to side of skillet. Add eggs. Cook until almost set. Stir into rice. Stir in lettuce. Serve at once with soy sauce.
