Ingredients

  • 1/2 cup blanched almond flour
  • 2 tablespoons coconut flour
  • 1/8 teaspoon celtic sea salt
  • 1/4 teaspoon baking soda
  • 3-4 large Medjool dates, pitted
  • 3 large eggs
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons honey if desired
  • 1/2 cup walnuts, chopped

Preparation

Step 1

In a food processor, pulse together almond flour and coconut flour
Pulse in salt and baking soda
Pulse in dates until mixture is the texture of coarse sand
Pulse in eggs and apple cider vinegar and honey if using
Very briefly pulse in walnuts
Transfer batter to a mini loaf pan
Bake at 350° for 28-32 minutes
Cool bread in pan for 2 hours before removing
Serve
Makes 1 mini-loaf
