Little Applesauce Muffins

Ingredients

  • 1/2 C. Butter or margarine - softened
  • 2 Eggs
  • 3/4 C. Applesauce
  • 1 3/4 C. Flour
  • 1/2 tsp Salt
  • 1 Tbsp Baking Powder
  • 1/4 C. Butter or Margarine - Melted
  • 1/2 C. Sugar mixed with 1/2 tsp Cinnamon

Preparation

Step 1

In a large bowl, cream Butter and Sugar until fluffy. Beat in eggs one at a time until fluffy. Beat in applesauce. Stir together flour, baking powder & salt.; add to butter mixture. Stir only enough to just moisten. Spoon into 36 greased mini muffin cups. Bake at 425` approx 15 minutes or til golden brown. While muffins are still warm, dip top into melted butter & then into the cinnamon sugar mixture. Best served warm.
