Farmers Casserole

Can be made ahead. Prepare through step 2. Cover and chill for up top 24 hrs. Bake in 350 over for 50-55 minutes.

Can be doubled for serving 12 people. Please in 3 qt. rectangle dish. Bake 45-55 minutes.

Ingredients

  • 3 cups frozen shredded has brown potatoes
  • 3/4 cup shredded Monterey Jack cheese with jalapeno or shredded cheddar cheese
  • 1 cup diced cooked ham, cooked breakfast sausage or Canadian-style bacon
  • 1/4 cup sliced green onion
  • 4 beaten eggs
  • 1 1/2 cup milk (or 1 12 oz. can evaporated milk)
  • 1/8 tea. salt
  • 1/8 tea pepper

Preparation

Step 1

Heat oven to 350 degrees. Coat a 2 qt. square baking dish with nonstick cooking spray. Arrange potatoes evenly in bottom of dish. Sprinkle with cheese, ham and green onion.

In medium bowl, combine eggs, milk, salt and pepper. Pour egg mixture over potatoes mixture in dish.

Bake, uncovered, at 350 degrees for 40-45 minutes or until a knife inserted near center comes out clean. Let stand for 5 minutes before serving.
