Lorinda's Over Stuffed Peppa's

Ingredients

  • 5 medium sweet red peppers or yellow peppers (or a mix)
  • 1 jar (14 ounces) spaghetti sauce, divided
  • 1 package of Italian turkey sausage links out of the casing, Hot
  • or sweet
  • 3/4 cup uncooked instant brow rice
  • 1/2 cup crumbled feta cheese
  • 1/2 cup chopped onion
  • 1/4 cup chopped tomato
  • 1/4 cup minced fresh parsley
  • 2 tablespoons sliced ripe black olives
  • 1/4 to 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes

I cannot tell you how many times I have made these stuffed peppa's. So easy, delicious & filling! Got this recipe a few years ago out of a Taste of Home cook book. No matter what recipe I use I always improvise and add ingredients. This is EXACTLY how I make these Over Stuffed Peppa's. ENJOY!!!




Cut tops off peppa's and remove seeds; set aside. place the Whole peppa's into a microwave for 4 minutes to soften. Reserve 3/4 cup spaghetti sauce; pour the remaining sauce into a 5-qt. slow cooker.
In a large bowl, combine the sausage, rice, cheese, onion, tomato, parsley, olives, garlic powder, salt, Italian seasoning, red pepper flakes and reserved chopped peppers and spaghetti sauce. Spoon into peppers.
Transfer peppers to a in 3-qt.slow cooker. Cover and cook on low for 4-5 hours or until peppers are tender. Yield: 5 servings.
