Peanut Butter & Banana Oat Cookies

Ingredients

  • 1/2 cup organic coconut oil, room temp
  • 1 cup organic natural peanut butter
  • 2 over-ripe bananas, mashed
  • 1 egg
  • 1/4 cup honey (optional)
  • 1 tsp pure vanilla extract
  • 1/4 tsp. almond extract
  • 1 cup organic old fashioned oats
  • 1/3 cup ground flaxseeds
  • 1/3 cup chia seeds
  • 1/3 cup shelled raw hempseeds
  • 1 1/2 tsp. cinnamon
  • 3/4 cup unsalted peanuts, chopped
  • 3/4 cup dark chocolate chips
  • 1/2 tsp. baking soda

Step 1

In one bowl mix oats with the cinnamon, baking soda & all the seeds. Put coconut oil in a large mixing bowl & beat with an electric mixer until soft, light & fluffy (I use my Kitchen Aid mixer, so if you have one I recommend using it). Add peanut butter & mix again until well incorporated. Add bananas, egg, honey, & vanilla & almond extracts, & mix thoroughly. Fold in the peanuts & chocolate chips. Spoon tablespoon sized blobs onto a parchment lined cookie sheet. Bake at 375 for 8 min. Tops should be just lightly brown, careful not to over-bake!

You can skip any of the seeds if you don't have them or don't want them, just replace with additional oats. Also I have added a couple scoops of vanilla protein powder to these a few times, the texture changes a bit so I like them best without, but if you want added protein give it a try.
