Ingredients
- 3/4 lb green beans
- salt
- 2 t Dijon mustard
- 1/2 t garlic, minced
- 2 T red wine vinegar
- 4 T olive oil
- ground pepper
- 1/8 t cumin
- 2 T basil or chives, chopped
- 3 red ripe tomatoes, sliced
- 1/4 c red onion, finely chopped
Preparation
Step 1
Blanch beans. Mix remaining ingredients and add oil slowly. Toss and serve.
