Ingredients

  • 1 pound ground beef
  • 1 pound sausage
  • 1 large onion chopped
  • 1 green pepper chopped
  • 2 celery stocks chopped
  • 2 cloves garlic chopped
  • 1 large can (28 oz) diced tomatoes
  • 2 cans kidney beans rinsed and drained
  • 1 box frozen spinach thawed and water squeezed out (optional)
  • 1 can V-8 juice (or water)
  • 1 large scoop of beef bouillon powder or 2 bouillon cubes
  • 3 Tbl. Chili powder
  • 1 Tbl. Cumin
  • 1/4 tsp. cayenne
  • 1/2 tsp. Tabasco
  • Handful of chocolate chips (optional)
  • Salt and Pepper

Step 1

Brown ground beef and sausage and break up in large pot. Drain and rinse with water to remove fat. Saute onions, celery, onions, garlic, and green pepper in large pot until softened. Stir in chili powder, cumin, cayenne, salt and pepper. Roast a bit. Add tomatoes – undrained, beans, meat, V-8, bouillon, spinach, chocolate chips and Tabasco. Stir. Bring to boil and simmer over low heat as long as you want. Will get thicker and tastier the longer it cooks. Adjust “temperature” to your taste.

Top with grated cheese when serving.
