Ingredients

  • 1 large boiling potato (1/2 pound) peeled and chopped
  • 1 medium onion – coarsely chopped
  • 1 celery heart (inner and leaves) coarsely chop to = 1/2 cup
  • 1 large grannie smith apple – peel and coarsely chop
  • 1 firm ripe banana – coarsely chop
  • 2 cups chicken broth (1 can)
  • 1 cup heavy whipping cream
  • 1 T. butter
  • 1 round tsp. curry
  • 1 tsp. salt

Preparation

Step 1

In a medium saucepan, simmer vegetables and fruits with broth until tender – about 12 minutes. Stir butter, salt and curry. Puree. Return to pan and stir in cream. Heat through.
