Ingredients

  • 2 Tbs. grated onion
  • 2 Tbs. butter
  • 2 cups chicken broth (1 can)
  • 1/4 cup instant mashed potatoes
  • 1 Tsp. salt – add after to taste
  • 1/4 tsp. pepper
  • 1/8 tsp. nutmeg
  • 1 – 12 ounce can evaporated milk
  • 1 cup canned pumpkin (not pumpkin pie mix)

Preparation

Step 1

In medium saucepan saute onion in butter. Add broth and bring to a boil. Remove from heat. Stir in the potato and seasonings until smooth. Beat in evaporated milk and pumpkin. Simmer 15 minutes. Add salt to taste.
