- 2 eggs
- 2 cups granulated sugar, divided
- 2 cups self-rising flour
- pinch salt
- 1 (15 oz) can fruit cocktail
- 2 tsp baking soda
- 1 (12 oz) can evaporated milk
Preparation
Step 1
1. Preheat oven to 375 degrees.
2. Lightly grease and flour a 9-inch square cake pan or baking dish. In a mixing bowl, beat together the eggs and 1 cup sugar. Stir in the flour and salt.
3. Drain the fruit cocktail over a bowl, reserving fruit and liquid seperately. Stir the baking soda into the liquid until it is well blended and frothy, then stir it into the batter. Fold in the reserved fruit.
4. Bake the cake for 30-40 minutes, until it springs back when lightly touched in the center. Remove from the oven. In a small saucepan over medium heat, combine the evaporated milk and remaining 1 cup sugar. Stir until the mixture is warm and the sugar is dissolved. Pour the syrup evenly over the warm cake. Serve warm with ice cream.
