Ingredients
- • Baked 9” pie shell
- • 3/4 cup sugar
- • 3 tablespoons cornstarch
- • 1/8 teaspoon salt
- • 1/4 cup water
- • 4 cups fresh blueberries
- • 1 tablespoon butter
- • 1 tablespoon lemon juice

Preparation
Step 1
Combine sugar, cornstarch and salt in saucepan. Adding water and 2 cups berries. Cook over medium heat stirring constantly until mixture comes to a boil and is thick and clear. (Mixture will be quite thick)
Remove from heat and stir in butter and lemon juice. Cool.
Place remaining 2 cups raw berries in mixture and gently stir. Pour into baked shell. Chill.
Top with ice cream or whipped cream.
An aside: Spread cream cheese on pie shell before putting in filling.
