Double Good Blueberry Pie

  • • Baked 9” pie shell

  • • ¾ cup sugar

  • • 3 tablespoons cornstarch

  • • ⅛ teaspoon salt

  • • ¼ cup water

  • • 4 cups fresh blueberries

  • • 1 tablespoon butter

  • • 1 tablespoon lemon juice


Combine sugar, cornstarch and salt in saucepan. Adding water and 2 cups berries. Cook over medium heat stirring constantly until mixture comes to a boil and is thick and clear. (Mixture will be quite thick) Remove from heat and stir in butter and lemon juice. Cool. Place remaining 2 cups raw berries in mixture and gently stir. Pour into baked shell. Chill. Top with ice cream or whipped cream. An aside: Spread cream cheese on pie shell before putting in filling.
