Amazing Muffin Cups

Ingredients

  • 3 c frozen hash browns, thawed
  • 3 T melted butter
  • 1/8 t salt
  • 1/8 t pepper
  • 14 links breakfast sausage
  • 6 eggs
  • 2 c shredded 4 cheese Mexican blend cheese
  • 1/4 c chopped red bell pepper
  • chopped or fresh chives or green onion

Preparation

Step 1

In a bowl, combine the hash brown, butter, salt and pepper. Press mixture onto the bottom and up the sides of a greased non stick muffin pan. Bake at 400 for 12 min or until lightly browned.

Meanwhile cook sausage according to package. Cut into 1/2 in pieces. Divide sausage among muffins. Combine the eggs, cheese and bell pepper. Spoon over sausage. Sprinkle with chives. Bake for 13-15 min or until set.
