Carrot Salad

Ingredients

  • 1 1/2 lbs carrots
  • 1 med red onion thinly sliced
  • 1/2 c chopped green pepper
  • 1 can tomato soup
  • 3/4 c sugar
  • 1/2 c veg oil
  • 1/2 c red wine vinegar
  • 1 1/2 t salt

Preparation

Step 1

Boil the carrots in salted water for about 5 min.

Combine the last 5 ingredients and beat until smooth. Pour over the carrots, red onion and green pepper. Marinate in frig for at least 24 hours.
