Broccoli Casserole

Ingredients
- Filling:
- 1-1/2 lb broccoli crowns, washed and separated into pieces - or -
- 2 lbs frozen chopped broccoli, thawed and drained
- 1 C mayonnaise
- 1 egg
- 1 can cream of mushroom soup
- 1 t Old Bay or seasoned salt
- 1 t black pepper
- 2-1/2 C shredded cheeses (any combo you like of cheddar, jack, American, colby)
- Topping:
- 1/2 c crushed Ritz (or other buttery crackers, optional

Step 1
Preheat regular oven to 350. In microwave, cook broccoli crowns for 3-4 minutes, just until bright green, but still crisp; drain well. Meanwhile, mix filling ingredients in large bowl; stir in broccoli. Transfer mixture to baking dish; cover with cracker crumbs, if using. Bake, uncovered, 30-35 minutes, or until top begins to brown evenly.
NOTE: 2 cans unsalted corn, drained, or 1 lb frozen corn, thawed, may be substituted for broccoli crowns and cream of chicken or cream of celery may be substituted for mushroom soup.
