Ingredients
- 3 Pounds small red potatoes
- 1/2 Cup Chopped fresh or frozen chives
- 1 Tablespoon grated onion
- 1 Teaspoon sugar
- 1 Teaspoon salt
- 1/2 Teaspoon ground white pepper
- 1/2 Cup sour cream
- 1/2 Cup plain low-fat yogurt
- 2 to 3 Tablespoons mayonnaise
- 2 Teaspoons lemon juice
- 2 Teaspoons Dijon mustard
- Radicchio leaves
Preparation
Step 1
Cook potatoes in boiling water to cover 30 minutes or until tender. Drain and cool slightly. Peel potatoes; cut into thin slices.
Combine chives and next 9 ingredients in a large bowl; add potato slices, tossing gently to coat. Cover and chill 2 to 3 hours. Serve on radicchio leaves; garnish, if desired.
Yield: 10 servings.
