Ingredients
- 1 cup plus 2 tbsp of vegetable oil
- 1 stalk of lemongrass, finely chopped
- 1 large yolk, at room temp
- 2 tsp of Dijon mustard
- 1 tsp fresh lemon juice
- 1/4 tsp of cayenne pepper, to taste
- S&P TT
- 1/2 clove garlic, peeled and mashed to a paste

Preparation
Step 1
In a small, nonreactive saucepan, heat the oil and lemongrass over medium heat and simmer for about 5 minutes. Remove from heat and cool to room temp. Strain.
In a bowl whisk remaining ingredients. Drizzle oil into this mixture slowly. Cover and refrigerate.
