Snowball Cake

A grown-up version of the classic lunchbox treat, this cake will bring back memories and bring up the question we all had as kids: how did the cream filling get in there?
Ingredients
- 1 pkg. (2-layer size) devil's food cake mix
- 1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
- 1 egg
- 2 Tbsp. granulated sugar
- 1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
- 1/4 cup powdered sugar
- 1 cup cold milk
- 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
- 1 cup BAKER'S ANGEL FLAKE Coconut
Preparation
Step 1
HEAT oven to 350ºF.
PREPARE cake batter, in 2-1/2-qt. ovenproof bowl, as directed on package; scrape side of bowl. Beat cream cheese, egg and granulated sugar until well blended; spoon into center of batter in bowl.
BAKE 1 hour 5 min. or until toothpick inserted in center comes out clean. Cool cake in bowl 10 min. Loosen cake from bowl with knife; invert onto wire rack. Remove bowl. Cool cake completely.
MEANWHILE, beat dry pudding mix, powdered sugar and milk in bowl with whisk 2 min. Stir in COOL WHIP. Refrigerate until ready to use.
PLACE cake on plate; frost with pudding mixture. Cover with coconut. Keep refrigerated.

I've made this cake several times and still have trouble with the cream cheese filling. I learned that you DON'T microwave the cream cheese to soften and also tried sitting it out for awhile and still goes to the bottom. HELP! Wonder if putting back in fridge to chill before adding to cake mix would fix this problem? I did the devil's food for Christmas [from the magazine] and Easter, I used yellow cake - tinted cream cheese blueish - tinted frosting peachish - tinted coconut light green - put egg- shaped sprinkles and stood Hershey's chocolate bunnies on top. This is a cute cake and NEEDS to be put in fridge and made the day before serving.
I loved this cake, but the only problem I had was getting the pudding to thicken. I had to throw it away. I had a tub of icing and used it. I also had this problem when I made the fruit tart with the pudding.
I've made this several times for different events and occasions. Everyone begs me for the recipe. It is very easy to follow and delicious!

I read reviews prior to making, and made the following modifications: mixed cake in my mixer then poured into Pyrex bowl coated with Wilton's cake release. Added 1/3 cup sugar and 1 t almond extract to cream cheese mixture. I mixed the cream cheese mixture in my mixer until it was fluffy which made for a nice custard consistency when baked. I also baked about 10 mins. longer than recipe called for. Beautiful presentation. Moist cake. Great tasting filling and icing. I would definitely make again and again!!
I made this for Christmas, everyone raved after seeing it. They enjoyed the taste and the cream cheese inside. I changed the cake to a red velvet looked sooo pretty. I did add the extra teaspoons of sugar for the cream cheese filling. I also let it bake an extra 10 minutes and it turned out perfectly. My family was quite impressed.
This is a keeper. I made this for the first time as dessert on Christmas Eve at my stepdaughter's house and everyone loved it (including me and I'm fussy about my cakes). It made a beautiful presentation and tasted delicious. I must say that the filling in my cake did not appear to be as much as the picture, but is was still scrumptious.
I baked this cake according to the receipe except I baked it for 1 hr. 15 minutes. The cake was very moist but the cream cheese filling was kind of dry. I also had to cut the bottom to make it flat. I think I'll try a 3 Qt. bowl next time along with more sugar for the cream cheese filling.
I made this cake for a friends birthday in June, and I dyed the coconut purple because that's both of ours favorite color. Now, I'm making it for Christmas, and I'm going to dye it up here too. So Fun! I'm going to dye the cream cheese part green, then dye the frosting red, leaving the coconut alone like new fallen snow. Love this recipe!
It was good, but next time I will add a lot more sugar to the cheesecake filling because it tasted very bland and almost bitter next to the sweetness of the icing.
I didn't like the cream cheese taste inside. Will not be making again.
You can ad an additional amount of sugar to total 1/3 of a cup and it will be much sweeter and should bake up just fine!
This was easy and so delicious! I did add two extra tablespoons of sugar to the filling. Make sure you buy a vanilla pudding mix that is on the white side. Our turned out a little yellow under the coconut. Next time I'll use a coconut cream pudding mix to avoid this color issue.
I did a couple of personal variations... I made 15 miniature cakes in small Pyrex bowls. Also made it gluten free. But, to mix it up a bit, I threw in some miniature choc chips. Turned out and came out perfectly! :) Will make again!
I made this cake last christmas and it was good ALTHO the cheesecake center was NOT very sweet - at least not in my humble opinion, not like a Hostess Snowball like I was expecting. I plan to try this recipe again this holiday season and was just wondering if anyone had any idea on how much more sugar to add to that part of the recipe??

My family loves this cake and I have taken it to church a couple of times and everyone has liked it too. The only thing that I do different is that I use White Chocolate Pudding instead of Vanilla pudding that way the frosting looks more like a real Snowball Treat. I would recommend this recipe to everyone.

This cake is OUTSTANDING...but the trick is to make it the day before. I also used coconut cream pudding instead of the vanilla because the vanilla pudding didn't lend enough coconut flavor for my liking. I added 1/4 tsp almond extract and 1/2 tsp vanilla extract to the cream cheese mixture for a little extra kick. Love it, love it, love it!!!
Cake okay. Filling curdled and was not the taste for chocolate cake. Perhaps a cream filling would have been better. Recipe was easy to make though. I will experiment with a better filling.

I made this for a luncheon at work and everyone wanted the receipe. It was a huge hit. Not hard to make at all, although I found I had to cook it a little longer than what was called for. Making it for Easter and I will put some jelly beans around the bottom
I've made this cake five times. It was a success on each occasion. This is one of the best cake recipes ever. It's a favorite and a classic for family and friends.
I love this cake!!!! My mom found this recipe, emailed it to me, and said "You are making this cake for me on my birthday!!!" And so I did... She LOVED it! Snowballs are her favorite treat and usually we just buy her a couple packs, but this year I got to make one! To make it look more like a snowball, I died the frosting pink. Speaking of frosting, I love tis stuff...I think the next time I make a cake I'm going to use this frosting but instead of using vanilla pudding, use choolate pudding...I think that would taste soooooooooo good. Anyways, I hope you make this cake because it is delicious!!!

This recipe takes some time to make, but the steps are easy. The cake was almost too beautiful to eat, but we did, and it was DELICIOUS! I made it for an anniversary party and everyone LOVED it...even great-grandma who is VERY picky. She said it was THE BEST cake she's had in a LONG time!
We made this for my son's 8th birthday. All he wanted was to go to the snow, so we did and made a snowball cake to continue the theme. We actually turned it into a snow covered hill. We used lego men and made sleds with lifesavers, and snowmen out of mini marshmallows. He doesn't like coconut(sad for us that do) so we just left it with the frosting. We even made sledding trails. It was a big hit! Looked so cute!
I don't know what I did wrong, but when I baked this in a bowl, I had to bake it an extra 20 minutes because the center tested undone. Then, when it finally seemed done, I pulled it out, let it cool for 10 minutes in the bowl (per instructions) then flipped it out onto a cooling rack. When I removed the bowl, the entire cake collapsed. I was in a bit of a panic because I was making this for an event and I didn't have enough of the ingredients to try it again and ended up fabricating another cake to replace it.
I have made this twice and both times it turned out good. Love the frosting and the cream cheese with the chocolate!

I've made this cake many times, it's a challenge to me because it doesn't come out of the bowl like the picture. Why? How can I get it to come out clean? My family loves it & I've taken it to party's.
We live in sunny Las Vegas, and have very little snow here. I made this cake for our family and friends at Thanksgiving, and it was a hit, so moist, and yummy. I told my kids, we may not have snow like Grandma, but we can enjoy our Snowball! Thanks for the recipe.
It was very good and easy. However the next time I make it, I will mix in one bowl, butter and flour another bowl. The top of the cake came off when I tipped it out - even though I had buttered the bowl before I began and loosened the edges. Very pretty presentation.
This cake was a wonderful dessert,I served Christmas day and got rave reviews from all. The only difference to the recipe is I made the cake in one bowl and greased and flowered another metal bowl to use for baking. No problems with sticking.
I made this cake for a women's group Christmas function at my church. After reading other reviews, I used a separate bowl to mix the batter and then poured it into another bowl to bake and had no problem removing it when done. I added a little vanilla to the cream cheese filling for more flavor, and I used white chocolate instant pudding instead of vanilla to keep the snowball white as suggested by another reviewer. The cake was beautiful and got a lot of "ahs" and "ohs." Everyone who got a slice said it was wonderful and the compliments were all positive. I am making it again this weekend to take to a private party. Thanks for a show-stopping recipe and thanks to other reviewers who helped me make the cake even better than the original recipe!

I made this cake for our Christmas Day Dinner. It is delicious! A couple of things I would change. It is really better cold so I would make it a day ahead to give the icing and cake time to chill. I did have a small piece on top that stuck to the bowl but I managed to piece it back on which worked fine. I will be making this again for sure!
This cake is wonderful. I did add half tablespoon extra of sugar and used an entire package of coconut for icing. Refrig. icing before spreading and cover edges of cake to prevent burning the last half hour.
