Ingredients
- 1/3 cup quick-cooking oats
- 1 3/4 cups milk
- 1 15-oz can solid pack pumpkin
- 1/4 cup packed brown sugar
- 1/4 cup canola oil
- 1 tsp vanilla
- 1 1/4 cup all purpose flour
- 1 1/4 cup whole-wheat flour
- 1 T baking powder
- 1 tsp pumpkin pie spice
- 3/4 tsp baking soda
- 1/2 tsp salt
Preparation
Step 1
1. Place oats in blender and blend until finely ground. Add milk, pumpkin, brown sugar, oil and vanilla. Blend until smooth. In a large bowl, mix flours, baking poder, spice, baking soda and salt. Add pumpkin mixture to dry ingredients and stir until just blended. Set batter aside for 10 minutes.
2. Spray a waffle iron with nonstick spray or oil and preheat. Spoon batter into waffle iron and cook until brown and crisp. Serve while hot, with hot cinnamon apples, or maple syrup.
