Tagliatelle with Leek Sauce

  • 2 sweet Italian sausages
  • 2 large leeks
  • 2 T olive oil
  • 1 t shallot, minced
  • 4 T unsalted butter
  • 1 c chicken stock
  • salt
  • pepper
  • 1 lb pasta
  • 1/2 c grated cheese

Step 1

Grill sausages, slice them thin and set aside. Trim leeks and discard top 1/3 of tough green portion. Slice the remainder into 1/2" thick rounds and rinse thoroughly in cold water. Drain well. Heat oil in a large skillet over medium high heat. Add leeks and saute until softened, about 5 minutes. Add sausages and shallot and cook, stirring, about 1 minute. Add half of the butter and all of the stock, reduce heat and simmer 5 minutes. Season with salt and pepper. Cook pasta until al dente. Drain and return to pot. Add leek sauce and toss well. Add remaining butter and cheese and toss.
