Linda Fox's Apple Cake

Ingredients

  • Sauce:
  • 1/2 c butter
  • 2 c sugar
  • 2 eggs
  • 2 c flour
  • 1 t baking powder
  • 1/2 t salt
  • 3/4 t baking soda
  • 1/2 t nutmeg
  • 1/2 t cinnamon
  • 3 c apples, peeled and chopped (20 oz apples work well)
  • 1 c nuts (optional)
  • 1 c sugar
  • 1/2 c butter
  • 1/2 c half and half
  • 1 t rum or vanilla extract

Preparation

Step 1

Cake:
Cream butter and sugar. Add eggs one at a time. Add dry ingredients gradually. Stir in apples and nuts. Grease a 9x13" pan. Bake at 325 for 45-50 minutes.
Sauce:
Combine butter, sugar and half and half in a saucepan over low heat, stirring occasionally until hot. Add extract or rum. Pour over cake.
*Note: Can be made a day ahead.
