Ingredients

  • 2 heads broccoli crowns, washed and separated into pieces
  • 2 T extra-virgin olive oil
  • salt and pepper, to taste
  • 1/2 C grated parmesan cheese
  • 1 T balsamic vinegar - or -
  • 1 t lemon zest

Preparation

Step 1

Preheat oven to 425. In a bowl or on a rimmed cookie sheet, drizzle oil onto broccoli. Season with salt and pepper. Place on cookie sheet and, uncovered, roast on middle oven rack about 20 minutes, or until broccoli begins to brown at edges. Immediately upon removing from oven, toss with cheese; then add vinegar or lemon zest. Can be served warm or at room temp.
