Ingredients
- red, green and yellow peppers, sliced
- onions
- scallions
- fennel bulb
- butter
- olive oil
- 3-4 T flour
- 1 small can tomato paste
- 1 small can water
- 3 cans chicken broth
- 1 T cayenne pepper
- 1 T salt
- 1 T pepper
- 1 T oregano
- 3 T cumin
- dash of paprika
- dash of chili powder
- cooked shrimp
- 1/2-1 c uncooked veal rice

Preparation
Step 1
Saute first 4 ingredients in butter and olive oil. (Cook onions first to get them soft.) After all is cooked, remove vegetables. Add flour. Cook 1 minute. Add tomato paste, water and broth. Put vegetables back in. In a small dish, mix spices. Microwave to warm and blend flavors. Add to pot along with cooked shrimp and rice.
