Mushroom Burgers (vegan)

Ingredients

  • 1 tbsp sunflower oil, plus extra for brushing
  • 1 small onion, finely chopped
  • 2 garlic clove, finely chopped
  • 2 tsp chili powder
  • 2 tsp ground cumin
  • 1 1/2 cups white mushrooms, finely chopped
  • 15 oz/425 g red kidney beans, drained and rinsed
  • 2 tbsp chopped fresh flat leaf parsley
  • salt and pepper
  • all-purpose flour, for dusting
  • hamburger buns
  • 1 Tbsp Mayo

Preparation

Heat the oil in a skillet over medium heat. Add the onion and cook, stirring frequently, for 5 minutes or until softened. Add the garlic, chili powder, cumin and cook, stirring frequently, for 4-5 minutes.

Put the beans in a small bowl and mash with a fork. Add the mushroom mixture, parsley, and season with salt and pepper. Add 1 tbsp of Mayo on the buns.

Preheat the broiler to medium-high. Divide the mixture equally into 4 portions, dust lightly with flour, and shape into patties. Brush with oil and cook under broiler for 4-5 minutes on each side. Serve in buns.
