Ann Benjamin's Bean Salsa

Ingredients

  • 1 can shoepeg (white) corn
  • 1 can black beans
  • 1 can black-eyed peas
  • 1 small red pepper, diced
  • 1 c celery, diced
  • 1 c onion, diced
  • 1 jalapeno, diced
  • 1 c canola oil
  • 1/2 c sugar
  • 1/2 c apple cider vinegar

Preparation

Step 1

Rinse and drain beans. Mix all ingredients. Drain off a bit of liquid before serving. Better the next day.
