L&P Lemon Meringue Pie (7up)

So i am from New Zealand and realise you can only buy L&P here. L&P is a lemon soda drink with a distinctive flavour. I feel the closet flavour you may is 7up (which would still be delicious). Any flat lemon soda would work though

Ingredients

  • PASTRY
  • 2 tablespoons white sugar
  • 1 egg
  • 125 g (1 stick) butter, softened
  • 1 3/4 cups flour
  • pinch salt
  • 1 teaspoon baking powder
  • FILLING
  • 400 g (14oz) can sweetened condensed milk
  • 1/4 cup fresh lemon juice
  • 1/4 cup flat L&P (lemon soda)
  • 1 tablespoon grated lemon rind
  • 5 egg yolks
  • MERINGUE
  • 5 egg whites
  • 1 1/2 cup caster sugar

Step 1

To make the pasty base beat the sugar and egg together until pale and frothy. In another bowl, mix together the butter, flour, salt and baking powder and add to the egg and sugar. Chuck it in a food processor until the mix clumps together in a ball around the blade. Chill for 30 minutes, then press into the base and up the sides of a quiche or cake tin. Chill again for 30 minutes, then bake blind for 20-25 minutes at 180ºC (350ºF) until golden and crisp.

For the filling mix all the ingredients together (not forgetting the L&P or lemon soda of course) and pour into the cooked pastry shell.

For the meringue topping, beat the egg whites until stiff peaks form. Then gradually beat in the caster sugar until the mixture is glossy and smooth. Pipe or pile on top of your filling, then oven bake at 130-150ºC (270-300ºF) for 20-25 minutes until the meringue is firm and crisp. Cool in the tin then serve that badboy with whipped cream and a smug grin because you’re an awesome chef.
