Fresh Pear Cake (Treebeard's)

The texture is similar to a fresh apple cake, but pears make a real taste difference. It fills your house with a wonderful aroma as it bakes.
Ingredients
- 4 cups peeled, cored and chopped pears
- 2 cups sugar
- 1 cup vegetable oil
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon allspice
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 eggs, beaten
- 1 cup chopped pecans
Preparation
Step 1
In a large bowl, mix pears, sugar and oil. Let stand 1 hour.
Spray a 10-inch tube pan or a Bundt pan with non-stick spray. Set aside.
Add remaining ingredients to pear mixture and mix. Pour batter into the
prepared pan.
Bake at 325 degrees for 1 hour and 15 minutes. Remove from oven and let cool
10 minutes.
Remove from pan and place on a wire rack to cool.
Makes one lO-inch cake.
A little trivia:
There are more than 3000 varieties of pears grown throughout the world.
Most of the pears produced in the United States come from Washington,
Oregon and northern California. Bose pears, identified with their long
necks, rough outer skins and a cinnamon brown color, are good for baking. Kieffer pears are well adapted to Texas and along with Oriental hybrids account for most of our state's pears. Kieffer pears are used primarily for canning, preserves and baking.
