Tortillini Soup

Ingredients

  • 3 cloves garlic, minced
  • 1 TBL butter or margarine
  • 1 can (48 oz) Chicken Broth
  • 1 pkg (19 oz)frozen cheese tortellini
  • Grated Parmesean cheese or shredded mozzarella
  • 1 pkg (10 0z) frozen chopped spinach
  • 2 cans (14.5 oz ea) stewed tomatoes w/ juice

Preparation

Step 1

In a large saucepan, over med-high heat, cook garlic in butter for 1-2 minutes. Add broth & tortellini. Heat to a boil; reduce heat & simmer 10 minutes. Add spinach & tomatoes; simmer 5 minutes longer. Sprinkle each serving with parmesan or shredded mozzarella.
