Homemade Mushroom Soup

Ingredients
- 1/4 cup butter
- 1 large onion, finely chopped
- 12 cups sliced fresh mushrooms (2 lbs)
- 1 tsp. dried thyme
- 1 tsp. salt
- 1/4 tsp ground pepper
- 1/4 cup flour
- 4 cups chicken broth
- 3 cups half & half cream

Preparation
Step 1
Melt butter in large pot on medium. Add onion. Saute for about 5 minutes, stirring occasionally, until softened.
Add next 4 ingredients. Increase heat to med-high. Saute for about 10 min., stirring occasionally, until mushrooms are softened. Reduce heat to medium.
Add flour. Heat & stir for 1 - 2 min. until thickened.
Add broth. Heat & stir for 5 min. until slightly thickened. Stir in cream. Heat & stir for about 5 minutes until heated through. Makes 11 cups.
