Chicken Tarragon Salad

Ingredients

  • chicken breast
  • 2 cloves of garlic
  • shallots, about 1/4 cup
  • 2 sprigs of tarragon, and 1 tsp. chopped
  • lemon zest and juice, 2 tbsps.
  • 1 tsp. chopped parsley
  • 1 tsp. chopped chives
  • 1 cup bibb lettuce
  • 1/2 cup Greek yoghurt

Preparation

Step 1

Slice 2 cloves of garlic. Chop shallots.

Place chicken, garlic, tarragon sprigs, and half of the shallots in saucepan with water. Cover chicken with enough water to cover it about an inch above. Bring to a boil. Then remove from fire and let chicken cook, about 15-20 minutes, until breast is cooked through. Cool and then shred chicken.

For dressing: mix yoghurt with lemon juice, chopped shallots and tarragon. Marinade chicken with dressing.

Tear leaves of lettuce. Add the marinated chicken. Chop chives, and parsley and sprinkle over salad. Zest the lemon and sprinkle over salad.
