Old-Fashioned Bread Pudding

Ingredients

  • For the pudding:
  • 3 c. soft bread crumbs(Challah bread is excellent for this)4 cups for firmer pudding
  • 2 cups milk, scalded with 1/4 c. butter(you may use 1/2 cream)
  • 2 eggs slightly beaten
  • 1/4 t. salt
  • 1 t. cinnamon or nutmeg
  • 1 t. vanilla
  • 1/2 c. seedless raisins or currents
  • For the sauce:
  • 1/2 c. butter, 1 c. sugar, 1/4 c. water, 1 egg-well beaten, 3 T. lemon juice and grated rind of 1 lemon if available.

Preparation

Step 1

For the pudding:(See the other bread pudding recipe in this reader to follow step by step instructions.)
Mix dry ingredients
After scalding milk, mix in eggs and vanilla
Put all ingredients together and place into 1 1/2-2 qt. baking dish

Place baking dish in pan of hot water (1" deep)-should come up about 1/3 of side of baking dish.

Bake at 350 for about 40 minutes until silverknife inserted 1" from edge comes out clean. Serve warm. Top with sauce and whipped cream.

Sauce:
Cook ingredients over medium heat, stirring constantly, just until mixture comes to a boil.
