  • Marinate:
  • 1 c. kikkoman soya sauce
  • 1/2 c. brown sugar
  • 1 tsp. fresh ginger (grated) or powdered ginger
  • fresh lemon juice
  • 1 tbsp. cornstarch
  • water
  • Fresh black cod
  • green onions

Preparation

Step 1

Heat oven to 450 degrees F.

Mix together sauce ingredients except cornstarch and water in a pot (I usually make double). Put on stove and heat. Mix cornstarch with small amount of water and add to heated mixture. Marinate should be just thickened slightly so it will adhere to the fish. If not thick enough add a little more cornstarch. Let cool and poor over prepared fish.

Cut fillet into 2 inch pieces. Cover with marinate. Let sit for a few hours. I use a tupperware container with lid and turn it over every once in a while to make sure all the fish is coated. Don't leave it in the marinate overnight as it gets too salty.

Put fish on a baking sheet. Sprinkle with green onions. Cook between 10 - 15 minutes depending on thickness of fish. Fish will start to flake on top when done. When fish starts to flake turn the oven to broil for 3 - 5 minutes to set the marinate.
