Cheesy Smoked Sausage & Potato Casserole

Ingredients

    pound skinless smoked sausage

  • 3

    cups (1 pound) Idaho potatoes, peeled, boiled and cubed

  • 4

    tablespoons butter

  • 4

    tablespoons flour

  • 2

    cups milk

  • 1/2

    teaspoon salt

  • 1/4

    teaspoon pepper

  • 1/2

    pound Velveeta cheese, diced

  • 1/2

    cup sharp cheddar cheese, shredded

  • 1/8

    teaspoon paprika

Directions

Preheat oven to 350°F. Cut sausage in half lengthwise, then chop into 1/2 inch "half moon" cuts. Cook sausage in a frying pan for about 15 minutes, turning frequently to brown slightly. Put potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss. Mix butter, flour, milk, salt, pepper and Velveeta in a saucepan over medium heat until warm, melted and smooth, stirring constantly with a whisk. Pour cheese sauce over potatoes and meat. Sprinkle cheddar cheese on top. Sprinkle with paprika. Bake 35 to 45 minutes, until golden brown on top.
