Ingredients
- 1 -2 cans black beans (or 1 lb. ground beef)
- 1 small onion, chopped
- 1 celery stalk, sliced
- 1/2 head green cabbage, thinly sliced
- 1 can beef broth
- 1 28 oz. can diced tomatoes
- 1 can mushrooms
- 1 can whole kernel corn
- 1 medium zucchini, sliced
- 3/4 c. medium-sized shell pasta
- 2 cubes instant beef bouillon
- 1 Tbs. dried basil
- 2 & 1/2 c. water
- Grated Parmesan cheese
Preparation
Step 1
In large pan, cook ground beef (if using), onion, celery & cabbage until vegetables are lightly browned, about 10 min.
Add tomatoes, beans, corn (all with their liquid) & rest of ingredients except for cheese & 2 & 1/2 c. water. Heat to boiling over high heat, stirring often. Reduce heat to low;cover & simmer 8-10 min. until pasta & vegetables are tender. Serve with Parmesan cheese.
