Wedding Cake Cookies

Ingredients

  • 1 cup butter, softened
  • 1 cup powdered sugar, divided
  • 1/2 teaspoon vanilla
  • 1 3/4 cup flour
  • 1/2 cup finely chopped pecans

Preparation

Step 1

Cream butter and 1/2 cup sugar at medium speed of mixer until light and fluffy. Add vanilla and flour, continue beating till well mixed. Stir in nuts. Cover and chill for 1 hour. Shape into 1" balls and place on cookie sheets. Bake 15 minutes at 350 degrees. Cool 2-3 minutes on cookie sheets. Roll in remaining powdered sugar, then cool completely on wire racks. Makes about 3 dozen.
