GRATIN DE LANGOUSTINES

Ingredients

  • 24 scampis
  • 50 grams of butter
  • 3 ounces white wine
  • 1 tablespoon chopped green onions
  • 3 tablespoons of cognac
  • 2/3 cup of heavy cream
  • 1 cup grated ementhal cheese

Preparation

Step 1

1. Remove scampis from shells.
2. Heat butter and sauté scampis for 6 minutes. Sprinkle with salt and pepper.
3. Add wine and green onions or shallots and reduce liquid.
4. Add cognac and set alight. Add cream and bring to a boil and transfer to a gratin dish.
5. Spread cheese.
6. Broil until cheese melts.
