Ingredients
- 1 med yellow onion, cut into 1/2 inch wedges
- 1 med sweet potato, peeled and cut into 1/4 inch rounds
- 1/2 cup olive oil
- 1 1/4 tsp chopped fresh rosemary
- salt and pepper
- 3/4 lb ham steak, cut into 3/4 inch cubes (2 cups)
- 2 tbsp maple syrup
- 2 tbsp basalmic vinegar
- 5 oz mixed greens
- 4 oz goat cheese crumbles
Preparation
Step 1
Heat oven to 450. Line a rimmed baking sheet with foil, on it toss onion, sweet potato, 2 tbsp oil, 1 tsp rosemary, 1/2 tsp salt and 1/4 tsp pepper, spread in single layer. Roast 15 min until tender. In small bowl, toss ham and maple syrup, make room on sheet, bake 10 min. In small bowl whisk 6 tbsp oil with vinegar, 1/4 tsp rosemary and 1/4 tsp ea of salt and pepper. Assemble salad...
