Ingredients

  • Rib Seasoning (makes 2 cups):
  • 1 cup sugar
  • 1/2 cup salt (preferably sea salt)
  • Mix sugar and salt together, then add remaining ingredients.
  • 2 tbsp. paprika
  • 2 tbsp. ground red pepper (not cayenne)
  • 1 tbsp. ground cumin
  • 1 tbsp. ground celery
  • Barbecue Sauce (makes 3 quarts):
  • 1 cup sugar
  • 1/4 cup salt
  • 2 tbsp. ground cumin
  • 2 tbsp. ground red pepper
  • 2 tbsp. garlic powder
  • 1 tbsp. chili powder
  • 2 quarts ketchup
  • 1 1/2 tsp. liquid smoke
  • 1 tsp. lemon juice

Step 1

Rib Seasoning:

In a medium bowl, mix together sugar and salt, then add remaining ingredients and mix together. Store in tightly sealed jar.

Trim meat and blot with paper towels. Then sprinkle ribs on both sides with seasoning, marinate for fifteen minutes. Arrange slabs on grill rack, close to the fire at first, allowing the seasoning to caramelize, then moving them further away; the meat will cook quickly in the beginning and more slowly once it is moved away from direct heat. The slabs should be cooked for one hour for the first pound and a half hour more for each additional pound, about two hours altogether. When you can pull the ribs apart with gloved hands, they are finished.

In a saucepan, warm the barbecue sauce. Transfer ribs to a cutting board and allow to cool slightly. Cut between the individual ribs and serve with the sauce.

Barbeque Sauce:

In a small bowl, mix together sugar, salt, celery seed, cumin, red pepper, garlic powder and chili powder. Set aside.
