Filetti di Pollo alla Garisenda

Ingredients

  • 2 tb oil
  • 2 tb butter
  • 1 clove garlic
  • 1 tsp salt
  • 2 cups mushrooms, sliced
  • 1/4 cup fresh parsley, finely chopped
  • 4 chicken breasts, boned and pounded flat
  • Flour
  • Salt
  • Pepper
  • 1 egg, beaten
  • 4 slices mozza cheese

Preparation

Step 1

1) Put oil and butter in frying pan; add garlic clove, salt and mushrooms. Put on low heat, cover and simmer 1/2 hour. Remove garlic and add parsley. Dip chicken pieces in seasoned flour, then egg, and fry gently in oil and butter until golden. Put chicken in large pan, covering each piece with mushroom mixture and topping with slice of cheese. Add pat of butter and bake at 350 until cheese is melted.
