Sausage Rolls

Ingredients

  • 1 lb pork sausages
  • pastry (third of usual recipe)

Step 1

Skin sausages. This is best done when sausages are very cold (partially defrosted if frozen)..Slit the skin lengthways and slip it off. Roll out about half of the pastry to about 1/8 inch thick. Roll into a rectangle just over 3 sausages long and slightly wider. Cut the left edge of the pastry so that it is straight.

Lie 3 sausages along the left, about 1/2 inch from the edge. Roll the sausages so that they are completely covered in pastry, beat an egg in a cup and paint the pastry with beaten egg. Roll the sausage and pastry on half turn so that it overlaps for about 3/4 inch. Slice each sausage into two or three pieces. Brush the top with beaten egg and slash lightly. Repeat for the remaining sausages.

Bake in 375°F oven for about 45 min. (40 at first) or until lightly brown.
