Tortellini Salad

Another recipe from Wegmans. It makes enough to feed a crowd for a summer picnic.

Ingredients
- 20 oz. fresh cheese-filled tortellini
- 1/2 C. light mayonnaise (or 1/4 C. Each – light mayo and fat free sour crm)
- 1/2 C. sugar
- 2 tsp. cider vinegar
- 3 C. fresh broccoli cut into small florets (blanched)
- 1/4 C. raisins
- 1/4 C. sunflower seeds
- 3/4 C. finely chopped red onion
- 6 slices crisp, cooked bacon (turkey?), crumbled
Preparation
Step 1
Cook tortellini in boiling water for 8-10 minutes. Drain and rinse quickly under cold water. Meanwhile, mix mayonnaise, sugar and vinegar. Toss cooked tortellini, broccoli, raisins, sunflower seeds and red onion together, then pour dressing over the salad and toss again to blend well. Sprinkle the crumbled bacon over the top. Chill to blend flavors.
