Alaskan Halibut Lasagna

When we stayed at The Fisherman's Inn in Port Alexandra, Alaska, in September, 2006, we enjoyed this delicious recipe and brought it and the halibut we caught home with us!

Ingredients

  • 5 t. Butter
  • 1 1/2 lbs. Halibut – small chunks
  • 2 garlic cloves – minced
  • 3/4 tsp. Dried thyme
  • 1/3 c. Flour
  • 1/2 tsp. Salt
  • 1 1/2 c. Chicken broth
  • 1 c.2% evap. Milk
  • 8 oz. Lasagna noodles – cooked and drained
  • 2 c. Shredded swiss cheese/Gruyere is best
  • Minced parsley

Preparation

Step 1

In large skillet over medium heat, melt 2 tbsp. Butter. Add halibut, garlic and thyme. Cook until fish is almost done. Remove and set aside. Add remaining butter to skillet. Stir in flour and salt until smooth; cook and stir until golden. Gradually add broth and cream. Bring to a boil; cook and stir 2 minutes or till thickened. In greased 9 x 13 baking dish, layer noodles, halibut, white sauce and cheese. Repeat layers. Cover and bake at 350 degree for 20 minutes. Uncover, bake 20 minutes longer until bubbly. Let stand 10 minutes before serving. Sprinkle with fresh parsley.
