cup triple fruits spread (apricot, peach, passion fruit)
tsp. cracked pepper blend
tsp. Prepared horseradish
cedar plank, soaked in water 1 hour
wild Alaska salmon fillets or portions (6-8 oz each)
Preheat grill on high 10 minutes. 1. Combine fruit spread, cracked pepper blend, and horseradish in small bowl; set aside. 2. Arrange salmon on plank; brush with fruit mixture. Clean grill with wire brush; using a soft cloth, coat grill grate lightly with vegetable oil. 3. Place plank with salmon on grill; close cover. Reduce heat to medium-high; cook salmon 12-15 minutes until internal temp reaches 130 degrees. Check by inserting thermometer into thickest part of fillet. Transfer to clean platter; let rest at least 2 minutes.
