Ingredients

  • 3-medium potatoes,cut into quarter--cook 20minutes drain----to dry potatoes shake pan over low heat
  • mash potatoes with masher or ricer KEEP HOT
  • Measure in bowl 1 and 3/4 cups flour

Preparation

Step 1

Make a well in the center of the 1---3/4cups flour--
Add mashed potatoes--mix well to a soft and elastic dough
Turn dough on a floured surface and knead
Break out small pieces of dough and use palm of hand to roll pieces to pencil thickness
Cut into pieces about 3/4in.long
Curl each piece by pressing lightly with the index finger and pulling the finger along the piece of dough toward you.
Gnocchi may also be shaped be pressing each piece lightly with a floured fork
Bring to boiling in a saucepan-----3qts water
Gradually add the gnocchi boil 8 to 10 minutes
Drain
serve wth 2cups meat sauce and 2 tablespoons parmesan cheese
